Level 6 Jerry’s Insanity ($19.95 for half a dozen) warns patrons to consume them only at their own risk because they use the spiciest pepper currently available to mankind – the Scorpion. Despite my tongue being set ablaze and my eyes a watery blur, through the haze of pain, I could still sense that their home made sauce was amazingly delicious. The wings, despite the spice, were sufficiently moist inside and had sauce-soaked crispy skin on the outside. Do order Level 3 and below if you’re scared, because their wings, without the torturous spice, are amazing. Located within walking distance to our office, I’ve been there on a few occasions to grab a bite and they didn’t disappoint. Their Dim Sum Hi-Tea Buffet ($19.80 on Weekdays, $22.80 on Weekends) is pretty good, and even includes one serving of Shark’s Fin Soup with Crab Meat per person. These two Shatec-trained "hawkerpreneurs" are among the few we know to use modern European kitchen techniques in a hawker centre. Inspired by Japanese and Hong Kong noodles, their innovative fusion dish is unique – noodles styled after bak chor mee (flat yellow noodles with mushrooms and minced meat), tossed in kelp, topped with sous-videchar siew (Japanese-style barbecued pork), boiled wantons, onsen tamago (poached egg), and a crispy potato-wrapped prawn (from $5). The kway (flat rice sheets) is simmered in a thin rice flour broth to keep the sheets silky smooth. The dark soy broth is flavourful without being too herbal or salty. Amoy street hawker centre plenty of good food. Used to go there to eat Fish Head beehoon for dinner.
